PREVIEW: 3 Satisfying Veggie Sandwiches

Moments after the creation of bread, humans slapped a piece of meat on it and made it a sandwich.

Most cultures have a type of sandwich, whether they are made with yeast bread, tortillas, or pitas.  The combinations are endless.  Fast food restuarants probably make the most sandwiches in the US, whether they are greasy burgers or deep fried chicken sandwiches.

In the US, most sandwiches usually consist of a condiment to help moisten the bread, meat, cheese, and a few crispy veggies, such as lettuce, a tomato, onion, and pickle.

Too often, however, the "meat" of the sandwich is unrecognizable. 

Deli meat, which is the most common sandwich meat, is full of nitrates.  In addition to raising your cancer risk:
Researchers from the Harvard School of Public Health (HSPH) have found that eating processed meat, such as bacon, sausage or processed deli meats, was associated with a 42% higher risk of heart disease and a 19% higher risk of type 2 diabetes.

To help you (and me) get out of the mindset that sandwiches need lunchmeat, I created three gratifying veggie sandwiches this week.

The veggies have vitamins, minerals, and antioxidants which improve your health.  The fiber in the vegetables helps with digestion and gives you a full-feeling.  You can choose one of my simple homemade bread recipes or use bakery bread.
